Our barrel aged Champagne balsamic vinegar is very high in acidic value of 7% and should
be respected! Sourced from Napa Valley this dry champagne has a super pop on the pallet, used best as a player in salad dressings and sea foods. Mix 1 part to 2 parts Big Paw olive oil; add salt and pepper and a pinch of your favorite fresh herbs. We are super fortunate to have located 50 gallons, this will be a limited run. Unless we can find more, this is “once its gone, its gone”, so Celebrate!
